Mash at 142F(61C) for a single decoction mash and hold for 10 minutes. Pull a thick decoction (1/3 mash)and hold at 152F(67C) for 20 minutes, then boil for 10 minutes. Return to main mash and hold at 154F(68C) until conversion is achieved. sparge with 168F(76C) water and boil for 60 minutes. add dark grains to the mash when you begin to sparge.
