NOTES

BIAB because lotsa wheat... and because FTW! Add the full grain load into 3.5 gallons of water at 111. Bring the mash up to 114 and rest for 25 minutes. After 25 minutes take out your small decoction (up to 40% of the grain bill). Bring the decoction up to 157 for 15 minutes, and then boil the decotion for 20 minutes. Yes boil it. Add the decoction straight (at boiling temp) back into the mash. Bring the whole thing up to 147 degrees for twenty minutes, and then up to 158 for 30 minutes (step mashing takes forever). Bring it up to 168 for mash-out. Remove the bag and squeeze the bejesus out of it. Or don't. It's like whatever, man, but get some of that juice out of there. Start your boil and dump most of an ounce of spicy hops (tett, sazz, etc) for 60. Pitch the remainder of that OZ of hops in at the 10 minute to go mark. Yeast: don't eff around. Use the yeast that is going to make this thing taste proper. Use WEIHENSTEPHAN! Wyeast 3068 or you'll just end up with wheat beer not a hefe. Bottle or Keg, either way carb it so you get a massive blowup of head that you can eat like a loaf of bread. Consume once its carbed up because wheat are best fresh.
