mash @ 160* F for 90 Min Sparge with 170* F water. Ferment at 68* F. 8 Habanero peppers steeped in 6 oz. of 100 Proof neutral spirit to be added at bottling. Wound up using 2.5 oz. in 5 gallons (plenty of heat) This is a fine Pale Ale without the Habanero Will Make this Again ---no changes
