INSTRUCTIONS

Mash at 148 degrees F for 75 minutes then mash out by heating mash to 168 degrees F over 10 minutes. Sparge with 168 degrees F water until 7.5 gallons have been collected in the boil pot. Boil 60 minutes making hop additions as indicated. Cool to at least 68 degrees. Pitch yeast and place in fermentation chamber and continue to cool to 54 degrees F.. Allow to ferment at 54 degrees for 14 days them raise temperature to 62 degrees for 3 days. Keg and force carbonate.
