INSTRUCTIONS

Mash in 19 liter, 61° 30' (PH5.5-> 5.3= 1ml lactic acid) Scarification 67° 30' no mash out to give the enzymes the chance to continue their excellent work during lautering. Sparge 8 liter 78° keep hazy ! Boil 60' Cascade 60' Amarillo 15' Yeast nutrient 10' Ultramoss 5' Ferment: First 2 hr aeration Primary 2 days @20° Primary 5 days @23° Take sample of 1 liter, add 6 gr sugar and bottle. Secondary + Dry hop 6 days@ 23° Take out dry hops and boil the cascade in 1 liter of water @ ph 5.9 for 15min -> hopextract 1000 IBU 23 l beer + 300 ml hopextract + 138 gram sugar -> ABV=6,3%, IBU = 60 bottle 15 liter Remaining 8l: add 4 l water + 300 ml hopextract + 24 gram sugar -> ABV=4.2%, IBU = 57
