INSTRUCTIONS

Steep grains in water as you heat from 135 to 180F. Add extract and first ginger, bring to boil. Second ginger goes in secondary for "dry-gingering". Zest soaked (days not minutes) in the rum. Lime-rum and citrus juices mixed with rum, and added at bottling time.
