Mash at !52F for 60 mins
Ferment the s-04 cool at 65F-ish...yeah, I know, it's supposed to be lager yeast warm, not ale yeast cool, but whatevs. It's what tastes right; restrained fruity ester against the solid backbone of malt and NB hops.
