INSTRUCTIONS

- Set 4gal strike water to 166F - Add 11.5# grist to strike water - Set RIMS set point to 154F, mash for 60min - Heat sparge water to 168F - Raise RIMS set point to 168F for mashout - Mash out for 10min - Collected 2.2gal first runnings (grain absorption ~0.157gal/lb) - Add ~4.8gal/168F sparge water to mash - Recirculate with RIMS set to 168F for 10min - Collect second runnings into boil kettle - Recirculate from boil kettle through RIMS (set temp at 210F) to let RIMS aid in getting to boil - Shut off RIMS/recirculation when boil begins, collect remaining wort in RIMS system and add to kettle - Boil for 60min, following hop schedule - After flameout, chill to 160F, add whirlpool hops, and recirculate for 20min - Continue chilling to ~100F - Collect ~6gal wort in fermenter (SS brew bucket) - Set ferment temp to 68F - Pitched 2 packs S-04 dry English yeast at ~85F - Small amount of fermentation activity noticeable the evening of brewday
