INSTRUCTIONS

Directions Add 8 gallons of distilled water to kettle. Heat the water to 120* Add grains to the water. Mix for 10 minutes then check pH. If necessary, add lactic acid in small increments until the pH reaches 5.3. Once the pH is 5.3, do the following step mash: 113* for 15 minutes 140* for 20 minutes 150* for 30 minutes 168* for 5 minutes Drain/vorlauf into hot liquor tank. Add hops using the following schedule: 2.5 oz of Perle at 60 minutes 0.25 oz of Hallertau at 15,10,5, and 0 minutes. Take a gravity reading: Target gravity is 1.057. Add distilled water until the gravity reaches 1.057. Add minerals based on wort volume. Cool wort to 65*. Aerate wort. Pitch yeast.
